What’s That Wednesday: Roast Beef from Fromagination

-Quince & Apple shallot confit with red wine

The specialty cheese shop on the Capitol Square just raised the bar for roast beef sandwiches everywhere. To start, the tender beef is sliced thin to allow for double layering. The Swiss cheese is used sparingly—a good thing, in this case. It leaves room for the two most interesting flavors in the sandwich. The house-made lemon pepper horseradish gives the sandwich a good kick, but what makes it really go the extra mile is the shallot confit with red wine from local specialty producer Quince & Apple. The shallots are slow-cooked and possess a noticeable sweetness, but the added red wine makes the flavor of this spread a bit more robust.
