1. The Backstory: Tim Thompson is a gracious host and humble owner—if you ask him what he likes most about running The Flying Hound Alehouse, he’ll jokingly respond with “free beer.” Perks aside, he’s made quite a name for himself in the food and beverage business as the man behind two other successful concerns: the Free House Pub in Middleton and the Library Cafe and Bar on the UW–Madison campus.
2. The Vibe: With a long bar, comfortable wood interior and photos of European castles, the aesthetically pleasing restaurant offers just the kind of friendly neighborhood atmosphere Fitchburg and west Madison residents have been waiting for. Adds Thompson: “I believe our product is top-notch, but the reason people come out is because they want to be treated really well with something really good to eat and something really great to drink."
3. The Menu: The Flying Hound serves up American pub food, much of it local, with a Euro twist—think fish and chips, bangers and mash and cheese curds. The ale list is extensive with a well-thought-out and rotating selection of American and European craft beer.
4. The Must-Try: The schnitzel sandwich—and don’t skimp on the onion gravy!—is a breaded pork loin on a Clasen’s bun with Muenster cheese and arugula. For big flavor but a lighter calorie count, order the grilled salmon served over braised kale.
5. The Bottom Line: The Flying Hound ushers in elevated pub grub and an exciting beer list to Fitchburg. It may have started to fill a niche, but it’s growing into a quintessentially Wisconsin gathering spot, where the food, friendly service and surroundings are a high-flying combination.
