"We follow domestic and international trends very closely. We might have a product development meeting with five agreed-upon truffles to explore. Of those, three might go into initial development. We will then conduct an internal tasting panel on the three to see if we like the directions they're headed in (Editor's note: Can we be a part of that panel?). Often, one gets dropped … by the time a ‘new' truffle hits the shelf, we've probably taste-tested eight to 10 versions of it.
