Adamah Neighborhood Table, the only Kosher-certified restaurant in Madison, is making from-scratch sufganiyot, perhaps the sweetest part of the Hanukkah tradition.
Executive chef Mark Walters, formerly of the Madison Club and Samba Brazillian Grill, is making these circular-shaped doughnuts, filling them with strawberry preserves and finishing them with a sprinkling of powdered sugar. And yes, he is frying them in oil to a light golden brown to commemorate the oil that miraculously burned for eight days when the Macabees purified and rededicated the holy Temple in Jerusalem.
Opened since August and located on the first floor of Hillel, the University of Wisconsin's Jewish Center, the café has been serving the Madison community traditional Jewish comfort food with contemporary flare with dishes such as housemade challah cinnamon French toast, homemade matzah ball soup, hot roast beef on ciabatta served with giardiniera and harissa aioli, the lox bagel-wich—with lox, red onion, tomato, cucumbers, field greens and a lemon-herb aioli—and smoothies such as the Badger Berry Bash, a mix of berries and black cherries blended with a choice of almond, soy or coconut milk.
But back to this week's sufganiyot doughnuts: Hanukkah has begun and there are only so many days to enjoy these sweet and chewy pastries. Better hurry up and get yours!
