Donna's pork loin chop with brandy peach sauce

Dress up your grilled pork chops with a light summer peach sauce. The sauce is also good served with chicken or salmon.

  • 1-1/2 pounds pork loin chops
  • salt and pepper to taste

Peach Sauce

  • 1/2 cup apricot preserves or preserves of your choice, sugar free
  • 1 tablespoon lemon juice
  • 1 tablespoon soy sauce
  • 1 tablespoon brandy
  • 1 tablespoon honey, to taste
  • 2 medium ripe peaches, peeled and sliced

Sprinkle pork with salt and pepper. Grill or pan fry pork chops until pork reaches 140 degrees or is still slightly pink in the center. Let rest 5 minutes before serving. 

While pork is cooking, prepare peach sauce. In a small saucepan, combine apricot preserves, lemon juice, soy sauce, and brandy. Bring to a boil and simmer for 2 - 4 minutes. Add honey to taste. Add peaches and simmer until peaches are tender. Remove from the heat. Serve warm sauce over the cooked pork chops.
