Head East for Salvatore’s Tomato Pies

Head East for Salvatore’s Tomato Pies
The Carbonara pizza (front) features a bounty of local produce, while the Tomato Pie (back) is a Salvatore’s classic.

Salvatore’s owner Patrick DePula’s grandparents came from Italy. However, his pizza-making finesse comes from growing up in Trenton, New Jersey. There, “tomato pies” have a focaccia-like crust overlaid first with cheese, then toppings and sauce. DePula cuts no corners in making his version, using quality ingredients, often locally sourced. Many enticing combinations make the menu, but none are better than the No. 1. It’s the classic tomato pie, stone hearth-baked with whole-milk mozzarella and house tomato sauce, plus your choice of add-ons. For some great pizza, head east … to Sun Prairie.

An earlier version of this story incorrectly stated that Patrick DePula’s parents came from Italy. It was his grandparents.
