The backstory: After growing weary of smuggling bagels out of New York in his suitcase, Brooklyn native Joe Gaglio opened Gotham Bagels downtown in 2007 along with one of his former students and co-founder of Ian’s Pizza, Ian Gurfield. Now, Gaglio has brought the Gotham name to Sun Prairie with Gotham Provisions Co., which expands upon the East Mifflin Street shop’s menu of hand-rolled bagels, fresh cream cheeses, sandwiches and other New York-style offerings.

The vibe: Gotham Provisions Co. is in a recently renovated space formerly occupied by the original Salvatore’s Tomato Pies. Order at the counter for quick pickup, or take a seat with a bagel sandwich after browsing the small market section stocked with a mix of international and local food products and meats.Gotham Provisions Co. comes to Sun Prairie

The menu: The Provisions menu is an expansion of downtown’s offerings and includes chicken salad, hot giardiniera, jalapeño garlic, Door County cherry cream cheese and other made-in-house items. As for sandwiches, feast your eyes upon new and familiar options, including a New York-style, piled-high corned beef sandwich; smoked and cured pastrami and Dijon on a bialy; the Long Island, house-roasted turkey breast on a pumpernickel bagel; and, a classic, the Brighton Beach, with house-smoked Alaskan salmon.

The must-try: When it’s not wrapped lightly in wax paper, the Bronx Bomber, a beast of a bagel sandwich, is stacked with prosciutto, mortadella, aged provolone, Genoa salami, arugula, tomato and hot giardiniera. “If you’re walking around the Bronx in New York and you want to get a sandwich, this is what you have,” says Gaglio.

The bottom line: “We felt as if we could bring downtown Madison–our farm-to-table concept, our big city flavors–to Sun Prairie,” Gaglio says.
