Strawberry, feta, farro, avocado and pecan salad

Farro is nutritious, ancient, whole grain wheat that is popular in Italy.
It adds an interesting texture to this colorful salad.

6 cups fresh spinach
1 medium avocado, sliced 2 cups fresh strawberries, sliced 1/4 cup cooked pearled faro or another whole grain of your choice* 1/4 cup pecan halves 1/4 cup reduced fat feta cheese, crumbled

Dressing

2 tablespoons olive oil
2 tablespoons balsamic vinegar 2 teaspoons Splenda or sugar 2 teaspoons Dijon mustard

On individual serving plates, arrange spinach, avocado, strawberries, cooked farro, pecans, and feta cheese.

In a small jar or cup, combine dressing ingredients. Using a hand held immersion blender, blend until smooth. Drizzle dressing on salad.
