Donna’s Scotch eggs

What a special way to dress up hard cooked eggs!
Leftovers warm up beautifully in the microwave.

1/2 pound ground Italian seasoned turkey sausage
1 egg, lightly beaten 2 tablespoons fat-free milk 1/4 teaspoon black pepper 1/4 teaspoon salt 1/2 teaspoon poultry seasoning, optional
1/4 cup bread crumbs 4 hard cooked eggs, peeled oil spray

Preheat oven to 400 degrees. Heavily grease a baking pan.

In a medium bowl, combine ground sausage, egg, milk, pepper, salt, poultry seasoning, and bread crumbs. Mix well. Using your gloved hands, take 1/4 of the mixture and wrap it around an egg. Press firmly to cover the whole egg. Place on baking pan and lightly spray with canola or olive oil spray on all sides. Repeat with remaining 3 eggs.

Bake for 25 – 30 minutes or until golden brown. Turn sausage covered eggs every 10 minutes while baking for more even browning.

Refrigerate any extra eggs. When ready to serve, warm them in the microwave.
