Donna’s pumpkin hummus
Pumpkin gives a unique twist to the traditional hummus. The tahini is optional but it does provide a special flavor.
1 can (15 ounces) garbanzo beans or chickpeas, drained
1/2 cup canned pumpkin puree 1 tablespoon lemon juice 1 tablespoon maple syrup 3/4 teaspoon pumpkin pie spice (or ½ t. cinnamon, dash nutmeg, cloves, and ginger)
2 tablespoons tahini*, optional salt to taste
Combine all ingredients in a food processor. Blend until smooth. Cover and refrigerate. Serve with fresh vegetable slices or pita chips.
Tahini is a thick paste made from crushed sesame seeds. It is high in protein, fiber, and polyunsaturated fat.
