Donna’s Pumpkin Biscuits

These are light little biscuits with a hint of pumpkin flavor. This is a great recipe because the batter can be made ahead of time. Bake them when you are ready to serve.

2-1/4 cups flour 2 tablespoons brown sugar 1 tablespoon Splenda or additional sugar 1 tablespoon baking powder 1/2 teaspoon salt 1 teaspoon pumpkin pie spice* 1/2 cup butter or margarine, cut in small pieces 2 cups canned mashed pumpkin

In a large bowl, combine flour, brown sugar, Splenda, baking powder, salt, and pumpkin pie spice. Add butter. Using a knife or pastry blender, cut butter into dry ingredients until mixture resembles course corn meal. Add pumpkin and stir just until mixed well. This batter can be made ahead and refrigerated until ready to serve.

When ready to bake, preheat oven to 400 degrees. Grease a baking pan. Using 2 teaspoons, drop small amounts of batter on baking pans. Bake for 12 – 18 minutes or just until bottom of biscuits are beginning to brown. Serve with honey if desired.

*Note: The following spices can be substituted for 1 teaspoon of pumpkin pie spice; ½, teaspoon cinnamon, ¼ teaspoon ginger, ¼ teaspoon nutmeg, and a dash of allspice.
