Donna’s Peach, Pepper & Avocado Salsa
Serve this with chicken, pork, or fish. It is colorful and tasty too. If you would like it a little hot, add a dash of Louisiana Hot Sauce.
1 large peach, peeled and chopped
1/2 cup chopped red bell pepper 1/4 cup chopped green onions 1 medium avocado, peeled and chopped 2 teaspoons lime juice
1 teaspoon olive oil
1 teaspoon Dijon mustard 1 teaspoon honey
Peel peach and cut into slices. Remove the rough red center that is close to the pit. Chop into small pieces. Place in small bowl. Add peppers, onions, and avocado. Sprinkle with lime juice and toss to mix.
In a small custard cup, combine olive oil, mustard, and honey. Mix well and add to the peach mixture. Stir to mix well. Cover and refrigerate until ready to use.
