Donna’s Orange Marmalade French Toast
I am not usually a fan of French toast but this one made me a convert. The flavor is so wonderful that you don’t even need syrup. I love the combination of the orange, cinnamon, and nutmeg. Directions are given for baking it or cooking it in a skillet. You can even put it together the night before and cook it in just a few minutes in the morning.
1/4 cup orange marmalade
8 slices bread
1 cup fat-free milk
1 tablespoon Splenda or sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
butter spray divided
Spread marmalade on one side of 4 pieces of bread. Top each piece of bread with another piece of bread to make a sandwich. Place sandwiches in a 9 x 13 inch pan. Set aside. In a small bowl, combine eggs, milk, Splenda, cinnamon, nutmeg, and salt. Whisk to mix.
Pour mixture on top of bread in the pan. Let stand 5 minutes and turn each bread sandwich over. Let stand 20 minutes or until bread has absorbed the milk mixture. This can be made the night before. Cover the pan and refrigerate until ready to bake.
This French toast can be either baked or cooked in a skillet.
To Bake: Preheat oven to 400 degrees. Butter a 7-1/2 x 10-1/2 inch baking pan. Spray with butter spray. Place 2 of the sandwiches in the pan. Bake for 10 minutes or until the bottom side is brown. Turn sandwich and continue baking 5 – 10 minutes or until the other side is brown. Repeat with remaining sandwiches. If you prefer, cook all sandwiches together on a large non-stick baking sheet.
To Cook in a Skillet: Spray a non-stick skillet with butter spray. When pan is hot, place sandwiches in skillet and cook over medium heat. Cook until brown on both sides of each sandwich. Add additional butter spray or butter as needed.
