Donna’s Irish Soda Bread

I always thought that soda bread was dry and tasteless but this one is a real surprise. It has a touch of sweetness and has a nice texture. Put it together in just a few minutes and enjoy the aroma of freshly baking bread.

4 cups flour 1/2 cup sugar 1 teaspoon baking soda 2 teaspoons baking powder 2 teaspoons salt 1/2 cup butter or margarine 1 cup dried currants or golden raisins 1 tablespoon caraway seeds, optional 1 large egg 1 cup low fat buttermilk

Preheat oven to 375 degrees. Grease a baking sheet. In a large bowl, combine flour, sugar, baking soda, baking powder, and salt. Add butter and cut in with a knife or pastry blender until mixture resembles course corn meal. Stir in currents and caraway seeds. Combine egg and butter milk in a cup. Pour into flour mixture and stir until mixed. Form into 2 rounded pieces and place on baking sheet. Cut an X in the top. Bake for 20- 30 minutes or until lightly brown. Cool on a rack.
