Donna’s Ham with Maple Syrup, Pineapple Ginger Sauce
Lean ham is a healthful choice for meat. It is a lean protein choice and has only 150 calories in a 4 ounce serving. This recipe makes a ham dinner special with the addition of a sweet ginger sauce to use in basting the ham and to serve on the side.
5 pounds extra lean ham
2/3 cup maple syrup
2/3 cup brown sugar
1/3 cup Dijon mustard
1/4 teaspoon ginger
1-1/2 tablespoons cornstarch
2/3 cup pineapple chunks in juice
1/3 cup golden raisins
Preheat oven to 350 degrees. Choose a lean ham or ham slices suitable in amount for your meal. Place in baking pan. Bake until ham reaches an internal temperature of 140 degrees when tested in the center with a meat thermometer. While baking, baste occasionally with sauce.
To prepare sauce, combine maple syrup, brown sugar, mustard, ginger, and cornstarch in a medium saucepan. Stir to mix. Cook over medium-hot heat, stirring constantly, until mixture comes to a rolling boil. Remove from heat. Use this mixture to baste the ham occasionally as it bakes. When ham is done, remove from the oven and place on serving platter. Add pineapple and raisins to the remaining sauce. Heat through and pass in a side dish with the ham.
