Donna’s Festive Fruit And Cranberry Salad

This is a light refreshing salad that goes well with turkey or ham. It can be made the day before serving.

3 tablespoons fresh lemon juice
2 tablespoons corn syrup, Splenda or sugar
4 large red apples, cored and diced
2 large fresh pears, cored and diced
1 cup dried orange flavored cranberries
2 cups shredded cabbage
6 ounces fat-free lemon flavored yogurt
1/2 cup chopped walnuts, optional

In a small cup, mix lemon juice and corn syrup. Set aside. In a large bowl, combine apples and pears. Add lemon juice mixture and stir to mix well. Add cranberries, cabbage, and yogurt. Stir to mix. Cover and refrigerate until ready to serve. (The lemon juice and yogurt prevent the fruit from turning brown.)
