Donna’s Chocolate Chip Cherry Cookies With Flax Seeds

Soft and chewy — a really good cookie and high in fiber too!

6 tablespoons butter or margarine 1/3 cup sugar 1/2 cup brown sugar 1 egg 1/2 teaspoon salt 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon vanilla 6 tablespoons finely ground flax seeds* 1 cup flour 1 cup oatmeal 1/2 cup miniature chocolate chips 1/2 cup dried cherries, optional

Preheat oven to 375 degrees or 350 degrees if using dark baking pans. Butter two cookie sheets. In a large bowl, combine butter, sugar, and brown sugar. Using an electric mixer, beat until smooth and light. Add egg and beat well. Add salt, baking soda, baking powder, vanilla and flax seeds. Mix well. Add flour and mix well. Add oatmeal and chocolate chips. Stir to mix. Using 2 teaspoons, drop a rounded teaspoon of batter onto cookie sheet.

Bake for 7 – 8 minutes or just until cookie is beginning to brown. Do not over bake. Remove from oven and let sit for 2 -3 minute or until cookies are firm enough to remove without breaking. Cool on a rack. Store in an air tight container or plastic bag. They will keep best in the freezer.

*Note that ¼ cup whole flax seeds will yield 6 tablespoons ground flax seeds. A coffee grinder works best to grind the flax seeds.
