Donna’s Blueberry Strawberry Coffee Cake

This is so moist, just the right amount of sweetness and so good!

1 egg
1/2 cup fat-free milk
2 tablespoons butter, melted
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup flour
1-1/2 cups fresh strawberries, thinly sliced
1 cup fresh blueberries


1/3 cup flour
1/3 cup sugar
1/2 teaspoon cinnamon
3 tablespoons cold butter

Preheat oven to 350 degrees. Butter a 7 x 11 or a 9 x 9 inch baking pan.

In a large bowl, combine egg, milk, butter, sugar, baking powder, and salt. Beat well.

Add flour and stir just until blended. Spoon into baking pan. Evenly distribute strawberry pieces on top. Sprinkle blueberries evenly on top.

In a small bowl, combine topping ingredients. Using a knife or a pastry blender, cut butter into dry ingredients. Sprinkle on top of berries. Bake for 35 – 45 minutes or until lightly brown and middle is set.
