Donna’s Blueberry Chutney With Brie

Your guests will rave about this unusual tasty appetizer. It can be served with Brie cheese or serve it more simply over cream cheese.

1/4 teaspoon cinnamon
1/8 teaspoon ground ginger
1/4 cup brown sugar
2 tablespoons lime juice
1 teaspoon cornstarch
1 cup fresh or frozen blueberries
8 ounces Brie cheese or Neufchatel reduced fat cream cheese.

In a small saucepan, combine ginger, cinnamon, brown sugar, lime juice, and cornstarch. Stir to mix. Add blueberries and bring to a boil. Cook for 3 -4 minutes or until blueberries are tender. Remove from heat. Cool to room temperature.

Place Brie cheese on microwave safe serving dish. Microwave for 1 – 2 minutes or just until warm. If using cream cheese, bring to room temperature and place on a plate. Smooth cheese with a knife into a circle shape. Spoon blueberry chutney on top. 

Serve with crackers or sliced baguette.
