Donna’s apple cranberry pork chop topping
The flavor, texture and color of this topping turns plain pork chops or chicken into an elegant meal.
2 medium apples, cored and diced
1/2 cup dried cranberries 1/4 cup water 1/4 teaspoon cinnamon 1/4 teaspoon nutmeg 1/4 cup orange marmalade, sugar free
1 tablespoon sugar, optional
In a small saucepan, combine apples, dried cranberries and water. Bring to a boil, reduce heat and simmer for 5 – 10 minutes or just until apples are tender. Remove from heat and stir in cinnamon, nutmeg, and orange marmalade. Add extra sugar if desired. Set aside.
When ready to serve, warm the apple cranberry mixture and spoon on top of grilled pork chops.
Note: Chicken can be substituted for the pork chops.
