Donna’s Apple Cake
You will love this moist cake with cinnamon flavored apples in each bite.
2 medium peeled apples, thinly sliced (about 2 ½ cups) 3 tablespoons Splenda or sugar 1 teaspoons cinnamon 1/4 teaspoon nutmeg
2 eggs 1/2 cup canola oil 1/2 cup Splenda Sugar Blend or 1 cup sugar 2 tablespoons orange juice 1 ½ teaspoons vanilla 1 teaspoon baking powder 1/2 teaspoon salt 1 ½ cups flour
Preheat oven to 350 degrees. Butter a 7 x 11 inch baking pan. Place apples in medium bowl. Combine 3 tablespoons Splenda or sugar, cinnamon, and nutmeg. Sprinkle over apples and toss to mix. Set aside. In a large mixing bowl, beat eggs and slowly add oil while beating. Add all remaining ingredients except flour and beat well. Add flour and beat well. Pour half of the batter into baking pan. Arrange apple slices, overlapping slightly, in a single layer on top of the batter. Pour remaining batter over the apples. Bake for 30 – 45 minutes or until golden brown and set in the middle. (Make sure the middle is done by inserting a knife in the middle. It should come out clean. The cake with Splenda will need less baking time than the cake made with sugar.)
Note: For a larger cake, double the recipe in half and bake in a 10 x 15 inch baking pan.
