Blueberry-mango colada salad
Makes 4 servings
Blueberries are available just about year-round, so this treat is always ready for your menu. Mangoes are also becoming more and more prevalent in fresh form, and can be found frozen also!
2 containers (4.4 ounces each) fresh blueberries (about 2 cups)
2 mangos, peeled, seeded, and sliced (about 1 ¾ cups)
¼ cup frozen piña colada mix concentrate, thawed
1 tablespoon dark rum, optional
Combine the blueberries, mangos, piña colada mix and rum (if using) in a large bowl. (If you’d like to present the dish with flair, set aside 8 of the blueberries, 4 mango slices, and also cut 4 thin lime slices. Thread onto toothpicks for a garnish.)
Spoon the mixture into 4 martini glasses or dessert dishes, dividing evenly.
Garnish if desired.
