Donna's Chicken Breast Stuffed With Spinach, Blue Cheese And Bacon

This is one of those meals that is very attractive and makes an impressive company meal but it is easy enough to serve any night of the week.

4 boned and skinned chicken breast halves 4 slices bacon salt and pepper to taste 1/4 cup flour 1 box (10 ounces) frozen chopped spinach, thawed and squeezed dry 4 ounces crumbled blue cheese or grated cheese of your choice

Preheat oven to 350 degrees. Butter an 8 x 8 inch baking or casserole dish. Lightly pound each chicken breast half to an even thickness of about 1/2 inch. Set aside. In a medium skillet, fry bacon until crisp. Remove from pan, crumble and set aside. Reserve the bacon fat in the skillet.

Sprinkle both sides of each chicken breast half with salt and pepper. Place flour in a shallow bowl and dip one side of each breast in flour. Set chicken pieces, floured side down, on a plate. Top each with 1/4 of the spinach, 1 ounce of blue cheese, and 1/4 of the bacon crumbles. Fold and roll chicken over the filling. Secure with tooth picks. Heat bacon fat in skillet and place chicken rolls in the skillet. Quickly brown each piece on top and bottom. Place browned chicken in baking pan.

Bake for 20 - 30 minutes or until chicken is thoroughly cooked.

Note: It works well to pound chicken between two lightly sprayed pieces of plastic wrap.
