St. Mary's Culinary Specialist Turns Cheese Into Art
The whispers through the halls of St. Mary's Hospital on Friday spoke of a "mousterpiece" in the making.

St. Mary's Hospital culinary specialist David Scheifel, who's moonlighted over the years as a Wisconsin State Champion cheese carver, turned a 42-pound block of 12-week old cheddar into tasty art in about 2 1/2 hours."Sometimes you're not always sure how you're going to start with one big block and end up with a piece (of art)," said Scheifel.Scheifel said he's been carving cheese for about 30 years. He said he started while working at a downtown Madison hotel."I like putting in the details and the finishing touches, and, of course, seeing it all come together," said Scheifel.He said his trick is making a few different drawings before he goes to bed, he sleeps on it and the rest is magic."As a kid I loved to make sand castles, sand villages, building buildings. I like architecture a lot," said Scheifel. "Art is in my blood."His most recent labor was turned out to be a prize winner for a far east Madison woman who won the item in at last year's March of Dimes Signature Chef's Auction."I had never been to an auction like that, so I didn't really know what to expect or what to do," said Sara Myers.But, instincts took over when the last item of the night came up for bid."I was like, 'I have to have this cheese' and (another bidder) wasn't getting it," Myers said. "So, I just kept bidding."Before she knew it, $300 was going to charity. "I love cheese," Meyers said. But then she was faced with a decision.
