Donna's strawberry, feta, farro, avocado and pecan salad

Better-for-you cookie dough with greek yogurt

Farro is nutritious, ancient, whole grain wheat that is popular in Italy.
It adds an interesting texture to this colorful salad.

  • 6 cups fresh spinach
  • 1 medium avocado, sliced
  • 2 cups fresh strawberries, sliced
  • 1/4 cup cooked pearled faro or another whole grain of your choice*
  • 1/4 cup pecan halves
  • 1/4 cup reduced fat feta cheese, crumbled


  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons Splenda or sugar
  • 2 teaspoons Dijon mustard

On individual serving plates, arrange spinach, avocado, strawberries, cooked farro, pecans, and feta cheese.

In a small jar or cup, combine dressing ingredients. Using a hand held immersion blender, blend until smooth. Drizzle dressing on salad.
