Donna's brussels sprouts with bacon and almonds

What a great way to serve Brussels sprouts! I even served them to someone who thought they did not like Brussels sprouts and they loved them.

  • 3 slices bacon
  • 2 tablespoons bacon fat
  • 1/2 teaspoon minced garlic
  • 1 pound Brussels sprout, thinly sliced (about 5 cups)
  • 1/2 medium red pepper, thinly sliced
  • 1 tablespoon rice vinegar
  • salt and pepper to taste
  • 1/4 cup slivered almonds

In a large skillet, fry bacon until crisp. Remove bacon from skillet, crumble and set aside.  Do not discard the bacon fat. Add garlic to the skillet and cook for 1 minute. Add Brussels sprouts and peppers. Add vinegar. Toss to mix. Partially cover pan and cook over medium heat, stirring occasionally, for 8 - 12 minutes or until Brussels sprouts are wilted, lightly brown and tender. Do not over-cook. Remove from heat. Place in serving bowl. Top with bacon and almonds.
