"Yankee-Pleaser Casserole"
From Carleen Wild (Taken from Notably Nashville - A Medley Of Tastes And Traditions, Junior League of Nashville)"A Dish containing all the foods most Yankees want to sample when they come South."1 Pound Bulk Sausage with Sage 4 Ounces (1 cup) Shredded Sharp Cheddar Cheese 1 (8-Ounce) Package Corn Muffin Mix 1 Cup Hot Cooked Grits 1/2 Cup (1 Stick) Butter, Melted 4 Eggs 1 3/4 Cups Milk, Heated 2 Ounces (1/2 cup) Shredded Sharp Cheddar Cheese Brown the sausage in a skillet, stirring until crumbly; drain. Sprinkle into a greased 2-quart baking dish and top with 1 cup shredded cheese. Combine the corn muffin mix, grits, butter, eggs, and milk in a bowl and mix well. Pour into the prepared dish. Top with ½ cup cheese. Bake at 325 degrees for 45 minutes. You may also prepare dish in advance and store in the refrigerator or freezer until needed. Allow a frozen casserole to thaw before baking and increase the baking time to 55 minutes for a refrigerated casserole.
