Cookin' With Karin: Skewered Bacon-Wrapped Shrimp

Recipes From Dan McGrath of Madison

Recipe for the homemade barbeque sauce:

  • 6 TBSP Dark Brown Sugar

  • 1/4 cup Molasses

  • 1/4 cup Cider Vinegar

  • 1/4 cup Honey

  • 1/4 cup Worcestershire Sauce

  • 2 TBSP Yellow Mustard

  • 1 TBSP Liquid Smoke

  • 1 tsp. Ground Allspice

  • 2 tsp. Fresh Ground Black Pepper

  • 2 tsp. Chili Powder (Pure)

  • 1/4 tsp. Ground Cloves

  • 1/2 tsp. Crushed Red Pepper

  • 40 oz. Ketchup

    In a saucepan, combine all ingredients except the ketchup. Cook down for 5-10 minutes. Add Ketchup and bring to a boil. Reduce heat, add salt and more black pepper to taste. Simmer for about 30 minutes, stirring occasionally.

    For shrimp skewers, you will need:

  • Pre-cooked Fresh Shrimp (Can be thawed from frozen shrimp, but fresh tastes better.)

  • 1 Pound of Bacon

  • Any additional seasonings that you enjoy

    Cut the tails off of the shrimp. Wrap bacon around shrimp tightly and place on a skewer. Once the skewer is full, you can add on whatever seasonings you like (such as garlic powder, etc.)

    Cook shrimp skewers on grill until browned. Once the bacon has browned, brush barbeque sauce on shrimp and let it cook down and carmalize a bit. You don't have to worry about the shrimp getting tough because the bacon juice will keep it tasting good. While the shrimp skewers are cooking, you will want to have some vegetables roasting in a wire roaster on the grill. Onions, green peppers, yellow peppers, red peppers, and jalapenos are the best. When the shrimp and vegetables are almost done, warm tortilla shells on the grill for a few minutes. (Wrap tortillas in foil first to keep from burning.)

    Serve the tortilla shells with the vegetables and bacon-wrapped shrimp inside. Other accompaniments that are good inside the fajita are cheese, sour cream, and salsa. Dan makes his own salsa, but you can use whatever is your favorite brand.
