Cookin' With Karin: Campfire Sausage and Potatoes

Ingredients for 4 servings 4 medium sliced potatoes
1 medium sliced red onion1 cup of sliced portabella mushrooms1 cup of freshly grated parmesan cheese1/2 lb of sliced smoked sausage2 Tbls of butter2 Tbls freshly minced parsley2 Tbls freshly minced tarragonSalt and cracked black pepperDirections Preheat grill to 300 degrees and use medium flames while cooking. Layer the sliced potatoes, onions, mushrooms, sausage, cheese, herbs, salt & pepper on a large piece of heavy-duty foil with butter. Fold and seal the foil round the ingredients forming a pack. Place the foil pack on the grill for approximately 20 minutes or until the potatoes are tender. This meal is ready to serve and makes for easy cleanup! Yummy!NOTES: This is recipe can be served as the main dish or as a side. We love to cook at our station and all the crews have identified one of our favorite recipes for the grill. -- Middleton EMS
