Cookin' With Karin: Campfire Sausage and Potatoes

Ingredients for 4 servings

  • 4 medium sliced potatoes

  • 1 medium sliced red onion

  • 1 cup of sliced portabella mushrooms

  • 1 cup of freshly grated parmesan cheese

  • 1/2 lb of sliced smoked sausage

  • 2 Tbls of butter

  • 2 Tbls freshly minced parsley

  • 2 Tbls freshly minced tarragon

  • Salt and cracked black pepper

    Directions

    Preheat grill to 300 degrees and use medium flames while cooking. Layer the sliced potatoes, onions, mushrooms, sausage, cheese, herbs, salt & pepper on a large piece of heavy-duty foil with butter. Fold and seal the foil round the ingredients forming a pack. Place the foil pack on the grill for approximately 20 minutes or until the potatoes are tender. This meal is ready to serve and makes for easy cleanup! Yummy!

    NOTES: This is recipe can be served as the main dish or as a side. We love to cook at our station and all the crews have identified one of our favorite recipes for the grill. -- Middleton EMS
