Donna's Bake Potato Platter

Please everyone in the family by serving baked potatoes with a variety of toppings. These are some suggestions. Choose any others that your family would like. Arrange potatoes and toppings on a platter or just pass them at the table. *(See the note about baking potatoes at the end of the recipe.)

  • 1 tablespoon canola oil
  • 1 medium green or red pepper
  • 1 medium onion
  • 4 slices turkey bacon
  • 4 ounces ground beef, 95% lean
  • 2 medium tomatoes, seeded and chopped
  • 1/2 cup green chiles, diced
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup fat-free sour cream
  • 4 ounces reduced fat shredded cheddar cheese
  • 4 medium potatoes, baked*

    In a medium skillet, heat oil. Add onions and peppers and cook until tender. Remove from skillet and place on platter. Add bacon and cook until well done. Crumble and place on platter. Add ground beef to skillet. Cook until well done. Crumble and place on platter. Arrange all remaining potato toppings on the platter with baked potatoes.

    *Note: It is quick and easy to make wonderful tender baked potatoes in a “Spud bag” or “Potato bag” that is made from a thick cotton material. Potatoes are done perfectly in 7 - 10 minutes in the microwave when placed in these bags. Bags can be purchased from Orange Tree Imports (1721 Monroe St., (608) 255-8211) in Madison, Wisconsin or from local vendors in your area.
