If you are looking for a great moist muffin, this is the one. The bonus is that you can make the batter ahead of time and bake them whenever you want fresh hot muffins. Note that they have 3 grams of protein per muffin and they are low in calories too!

  • 2 eggs
  • 1/4 cup canola oil
  • 1/2 cup unsweetened applesauce
  • 1/2 cup brown sugar
  • 1/4 cup corn syrup
  • 1 cup low fat buttermilk
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup flour
  • 1-1/2 cups rolled quick oats
  • 1 large apple, finely chopped
  • 1 cup chopped walnuts
  • 1/2 cup dried cranberries, optional

Preheat oven to 350 degrees. Coat muffin tins with cooking spray.
In a large bowl, combine eggs, oil, applesauce, brown sugar, corn syrup, buttermilk, cinnamon, nutmeg, vanilla, baking soda, baking powder, and salt. Beat well with electric mixer. Add flour and rolled oats. Stir to mix well. Add apple and nuts. Add dried cranberries if desired. Spoon batter into muffin tins, filling 2/3rd full.

Bake for 12 - 18 minutes or until set in the center and lightly brown on the bottoms. Remove from tins and cool on a rack.
