No Bake Energy Balls

The easiest way to make these cookies is to use a stand mixer, but you can also enlist your kids' help and prepare the dough by hand. Either way, these oatmeal treats have all the flavors kids love: chocolate, honey, peanut butter, and more.

Ingredients:

1 cup peanut butter
1/2 cup honey
3 cups old fashioned oats
1/2 cup ground flaxseed
1/2 cup mini chocolate chips

1 cup any combination of nuts and soft dried fruit (try 1/2 cup coarsely chopped peanuts or almond slivers and 1/4 cup each of unsweetened dried cherries and chopped unsweetened dried apples)

Directions:

•In a stand mixer or by hand, combine peanut butter and honey until smooth. Gradually add oats and ground flaxseed.
•Add chocolate chips and desired nut and fruit combination, mix in gently.
•Roll dough into golf ball-size cookies.
•For maximum presentation value, put in paper mini muffin cups. You can eat them right away, but they'll be less sticky after a night in the fridge. They freeze well too, layered on wax paper in an airtight container.

Makes 40 to 48 cookies.

Note: To prevent a dangerous infection, never give honey or foods with honey to a child younger than 12 months.

Jordan’s Jumping Juice Smoothie

Ingredients:

3 cups ice
1 banana
½ cup strawberries
1 cup Dole Paradise Blend fruit juice

Steps:

Add everything to the blender and blend until smooth. Pour into cups and enjoy! Makes 3 servings.

Crunchy Apple Salad

This recipe is fast and easy for kids to help prepare. Incorporating fruits and vegetables together may help some kids try new foods they may not like when served alone.

Ingredients:

1 Granny Smith apple, washed and cut into 1/2 inch pieces
1 Red Delicious apple, washed and cut into 1/2 inch pieces
1 sweet/tart apple (Macintosh, Courtland), washed and cut into 1/2 inch pieces
1 tsp. lemon juice
2 ribs of celery – chopped into 1/4 inch pieces
1/4 cup walnuts
1/2 cup Greek Yogurt
1 tsp. vanilla extract
1 Tbsp. Honey

Directions:

• Cut apples into 1/2 inch pieces.
• Toss with lemon juice to prevent browning.
• Cut celery into 1/4 inch pieces.
• In a small bowl mix yogurt, vanilla extract, honey – set to the side.
• Allow kids to fill salad bowl with a mixture of the apples, celery and walnuts.
• Add 2 tablespoons of dressing to each bowl and have kids mix until well blended. (or mix apples, celery and yogurt mix in large bowl and allow to serve individually at the table with walnuts sprinkled on top)
