Choose your favorite mustard and make this easy-to-prepare chicken dinner very special.
- 1/2 tablespoon canola oil
- 4 boned and skinned chicken breast halves
- salt and pepper
- 1/2 cup white wine or chicken broth
- 1/4 cup Dijon mustard*
- 1/4 cup honey
- 2 tablespoons sugar-free or regular apricot preserves
- 1 tablespoon soy sauce
- 1/2 teaspoon hot curry powder
- 2 tablespoons cornstarch
- 1/4 cup water or wine
Preheat oven to 350 degrees. In a large skillet that can be used in the oven, heat oil. Add chicken breasts. Sprinkle with salt and pepper. Cook over medium-hot heat just until lightly brown on both sides. Add wine or chicken broth and stir to deglaze the pan. Remove from heat.
In a small bowl, combine mustard, honey, apricot preserves, soy sauce and curry powder. Mix well. Spoon a tablespoon of sauce on top of each piece of chicken. Cover pan with lid or tight fitting aluminum foil. Bake for 30 minutes or just until chicken is cooked through. The time will depend on the thickness of the chicken. Remove chicken from skillet.
In a small cup, mix cornstarch and water together. Add to the skillet and bring to a boil over medium heat while stirring. Add addition wine or broth if needed to reach desired consistency for the sauce. Serve sauce on the side at the table.
*Note: in place of preparing the mustard topping with the above ingredients, substitute a bottled spicy-hot honey-mustard or any other favorite mustard of your choice. It works best if you add a little honey to the mustard you choose.
