How can a snack be healthy and tasty too? Just try these and you will be surprised. Enjoy the game!
9 slices whole wheat multi-grain bread, crusts removed*
olive oil spray
Filling
10 ounces frozen chopped spinach, thawed, squeezed dry
4 slices bacon, fried crisp and crumbled
1/4 cup finely chopped onion
1/3 cup grated parmesan cheese
1/2 cup fat-free sour cream
1/2 teaspoon ground thyme
1/4 teaspoon salt
hot pepper sauce or red pepper flakes, to taste
Preheat oven to 350 degrees. Cut each slice of bread into quarters. Spray both sides of each piece of bread and press firmly into miniature muffin pan cups. In a medium bowl, combine all filling ingredients. Stir to mix. Spoon 1 rounded teaspoon of spinach mixture into bread lined muffin cups. Bake for 12 - 15 minutes or until bread tips are brown and filling is heated through. Serve warm or at room temperature.
*Optional lining for the muffin cups: Place one thinly sliced smoked turkey or ham piece into a greased mini-muffin cup in place of the bread. Add filling and bake.
Another filling idea: Spoon a small spoonful of the following into each bread lined muffin cup:
chunky salsa, spicy refried beans, sliced olives, shredded cheese
