This is an easy-to-prepare meal that is attractive and full of flavor. Serve it for a quick family meal, but it can be an impressive meal for company too. It is even simple enough to cut the recipe in half and serve it as a cozy dinner for two.
4 boned and skinned chicken breast halves salt and pepper 1 teaspoon canola oil 1/2 cup shredded mozzarella cheese 4 ounces lean ham, thin deli sliced 4 medium apples, cored and sliced 1 cup pomegranate juice 1 tablespoon brandy or balsamic vinegar 2 teaspoons finely chopped crystallized ginger, optional
Preheat oven to 350 degrees. Butter a 9 x 11 inch baking pan. Place each chicken breast between 2 pieces of plastic wrap. Pound lightly until an even thickness. Sprinkle each piece with salt and pepper.
Heat oil in large skillet. Quickly brown chicken on one side over medium-hot heat. Remove pan from stove and place chicken in baking pan with the browned side down. (Chicken does not have to be completely cooked at this point.) Sprinkle cheese on top of each piece of chicken and top with thinly sliced ham. Roll chicken or fold in half. Fasten with toothpicks. Set aside.
Return skillet to stove. Add apples and cook over medium heat until lightly brown. Place apples on top of chicken. Add pomegranate juice and brandy to skillet. Bring to a boil and continue to boil until reduced by half. Pour over apples and chicken. Bake for 20 - 30 minutes or until chicken is completely cooked through and sauce has thickened to syrup consistency. Remove from oven and sprinkle with crystallized ginger if desired. (Do not use regular ginger powder.)
Note: Chose a good cooking apple such as McIntosh or Golden Delicious. The apples can be left unpeeled or they can be peeled if you prefer.
