I love these bars. They are moist in middle and crunchy on top. They are so light that it is easy to enjoy more than one!
Crust 3/4 cup flour 2 tablespoons brown sugar 3 tablespoons butter or margarine, melted
Cheesecake Filling 8 ounces Neufchatel reduce fat cream cheese, room temperature 1/4 cup Egg Beaters or 1 egg 1/4 cup Splenda or sugar 1 teaspoon vanilla
Apple Topping 2 cups finely chopped apples 2 tablespoon Splenda or sugar 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg
Streusel Topping 1/2 cup flour 1/4 cup brown sugar 1/4 cup oats, rolled (raw) 4 tablespoons butter or margarine
Preheat oven to 350 degrees. Butter a 7 x 11 inch baking pan.
Crust: In a small bowl, combine crust ingredients. Mix well. Pat firmly into bottom of baking pan. Bake for 8 minutes. Remove from oven.
Cheesecake filling: While crust is baking, combine cream cheese filling ingredients in a small bowl. Beat until smooth with electric mixer. Pour mixture over crust.
Apple topping: In a small bowl, combine apple topping ingredients. Stir to mix. Spoon over cream cheese filling.
Streusel topping: In a small bowl, combine streusel ingredients. Using a pastry blender, cut butter into dry ingredients until mixture resembles course corn meal. Sprinkle on top of apples.
Bake for 45-50 minutes or until apples are tender and topping is lightly brown.
