This has a wonderful combination of flavors and it is lower in fat and calories than most bread dressings or stuffings.
1 tablespoon canola oil 1 large onion, finely chopped 1/2 cup dried apricot halves, each cut in 4 pieces 1 large apple, peeled, cored, and chopped 1/2 teaspoon cinnamon 1/4 teaspoon cloves 1/2 teaspoon savory or thyme 1/4 teaspoon salt 2 1/2 cups fat-free chicken broth 4 cups herb-seasoned stuffing cubes
Preheat oven to 350 degrees. Butter a 2 quart oven-proof bowl. In a medium skillet, heat oil. Add onions and cook over medium heat until lightly brown. Add apricot pieces, apples, cinnamon, cloves, savory, and salt. Cook 5 minutes. Add chicken broth. Bring to a boil. Reduce heat and simmer for 10 minutes. In a large bowl, combine fruit mixture and stuffing cubes. Gently mix with a spoon. Place mixture in oven-proof bowl. Cover and bake for 40 - 50 minutes or until heated through and slightly brown on the bottom.
