Donna's panko parmesan breaded whitefish
This is a simple recipe to use on any boneless fish fillet. The light breading browns beautifully in the oven. No need to deep-fat fry!
- 1 pound tilapia or any fish of your choice
- 1 egg, lightly beaten
- salt and pepper
- 1 cup panko bread crumbs
- 1/2 cup grated dry Parmesan cheese
- 2 tablespoons parsley, finely chopped
- 2 tablespoons fresh basil, finely chopped
Preheat oven to 425 degrees. Use a spray oil or butter to grease a baking pan. Crack an egg into a shallow dish. Lightly beat. Add salt and pepper in desired amount.
In another shallow dish, combine bread crumbs, grated Parmesan cheese, parsley, and basil. Place each piece of fish in egg and then dip into bread crumb mixture. Press bread crumbs firmly on both sides of each piece of fish. Place on baking pan. This can be prepared ahead at this point and refrigerated until ready to bake.
Bake for 15 - 25 minutes or until lightly brown and fish is done in the middle. The baking time will depend on thickness of the fish.
Note: Add other spices or herbs of your choice to the bread crumb mixture.
