Oh so yummy – just the perfect dessert for a chocolate lover. Make it in a pie pan or use mini muffin pans for a little bite, of a guilt-free, chocolate treat. This pie can be made with or without a pie crust. I like to make it without a crust to save calories.

  • 1/4 cup brown sugar
  • 1/2 cup corn syrup
  • 2 tablespoons butter or margarine, melted
  • 1 teaspoon instant coffee
  • 3 eggs
  • 2 tablespoons flour
  • 2 tablespoons brandy or rum
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 3/4 cup chocolate chips, melted
  • 1-1/2 cups chopped walnuts, divided

Preheat oven to 350 degrees. Heavily butter-spray a 9 inch pie pan or mini muffin pan.

In a food processor, combine brown sugar, corn syrup, butter, instant coffee, flour, brandy, vanilla, and salt. Process until smooth. Add melted chocolate chips and beat until smooth. Stir in 1 cup of walnuts. Pour into pie pan or into mini-muffin tins. Sprinkle remaining walnuts on top.

Bake for 25 - 30 minutes if in a pie pan or 15 minute if using mini muffin pans.
