These are very good moist brownies with a cake-like texture. There is one ingredient that you may not have on hand -- a box of sugar-free chocolate pudding mix. I try not to use unusual ingredients in my recipes but this one seems to be essential.

  • 1 can (15 ounces) beets, including juice
  • 3 eggs
  • 1 cup canola oil
  • 1-1/2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 package (1.4 ounces) chocolate pudding mix, sugar free
  • 1-1/2 cups flour
  • 1-1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 3/4 cup chocolate chips, optional
  • 3/4 cup chopped walnuts, optional

Preheat oven to 350 degrees. Butter a large 11 x 15 inch baking pan. In a large food processor, pureed beets with the juice. Add eggs and oil. Mix well. Add all remaining ingredients except chocolate chips and nuts. Process until smooth. Add chocolate chips and nuts if desired. Spoon into baking pan.

Bake for 20 minutes or just until set in the middle. Do not over-bake.

Note: If you do not have a large food processor, puree beets in a small food processor or in a blender with the eggs and oil. Pour into a large bowl and add remaining ingredients. Mix well.
