Clafoutis is a baked French dessert with berries or cherries arranged on the bottom of the baking dish and covered with a thick flan-like or pancake-like batter. It is usually served with a sauce or dusted with powdered sugar.

  • 2-1/2 cups mixed berries (blueberries, raspberries, blackberries)
  • 3 large eggs
  • 1 egg yolk
  • 1/4 cup sugar
  • 1/2 cup Splenda or additional sugar
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1 cup fat-free milk or milk of your choice
  • 1 tablespoon brandy
  • 1/2 teaspoon vanilla

Brown Sugar Bandy Sauce, optional

  • 1/2 cup brown sugar
  • 1/4 cup corn syrup
  • 1 tablespoon butter
  • 1 tablespoon brandy
  • 1/2 teaspoon vanilla
  • 1/4 cup fat-free or regular half & half

Preheat oven to 350 degrees. Butter a 9" deep pie pan. Arrange berries in bottom of pan. Set aside. In a large bowl, combine eggs and egg yolk. Beat for 2 minutes or until light and slightly thickened. Add sugar, Splenda, flour, and salt. Mix well. Gradually add milk while mixing. Add brandy and vanilla. Mix and pour over fruit in the pie pan.

Bake for 45 - 50 minutes or until set in the middle.

Serve warm if possible but it is also good room temperature or cold. Serve with warm brandy sauce if desired. 

Note: Any combination of berries can be used. They can be fresh or frozen. 

To prepare brandy sauce, combine brown sugar, corn syrup, and butter in small pan. Bring to a boil over medium heat while stirring constantly. Boil for 1 minute. Remove from stove and add brandy and vanilla. Return pan to the stove and add half & half. Heat through while stirring. Store in the refrigerator and warm the sauce before serving.
