I have a question for you. How many slices of pie
do you think you've eaten so far this year? The average
American eats only six slices of pie all year long.
And for those of you who have beaten the average so
far, I know you'll love the cream pie we're making
today. And for those of you who haven't even come
close to that number, this is the perfect pie to catch
up with because it's irresistible. We begin by putting
some shortbread cookies, walnuts and butter in a food
processor and blending them until they look like this.
Then we press this into the bottom and sides of a
pie plate before baking it off for 10 minutes or so.
Now, while that bakes, we'll beat together some cream
cheese, sweetened condensed milk, lime juice and a
package of pistachio pudding. Once it's smooth, we'll
add some chopped walnuts and a can of crushed pineapple,
with the juice and all. And to make this pie as light
as a cloud, we'll gently fold in some whipped cream
into our filling before spooning it into the crust.
As soon as it firms up, top it off with a few chopped
pistachios, or walnuts, and it's ready to slice. If
every pie was this creamy and refreshing, we'd all
be eating a lot more than six slices per year. I do
