I've always been a big fan of anything I could eat
with my hands.
I guess I got that from working in the catering and
restaurant business for so many years.
I often had to eat on the run.
And what I'm making today is a dish that has always
been one of my favorites grab and gos.
Let me warn you though, these corn fritters are addictive.
All we do is mix together some flour and baking powder
with a bit of salt and pepper.
Once that's all combined, we add a couple of eggs,
some salsa, a can of cream-style corn, and some frozen
corn or if you have fresh corn, cut it off the cob.
After giving this a good mix, we drop spoonfuls of
batter in a skillet and cook them for a couple of
minutes on each side.
And we can make mini ones to serve as an appetizer
or make them bigger for the perfect side dish.
Once they're golden, they're done.
They're sort of a cross between a crab cake and a
hush puppy except they're studded with lots of sweet
No matter what you call them, I promise you're going
to love them.
Maybe serve them with a little extra salsa for dipping
for a real treat.
