We are a country who loves our chicken.
And there's a good reason for it.
Besides being pretty reasonable in price, cooking
chicken is like painting on a blank canvas.
Take chicken breast for example.
It can be cut into slivers for stir fry, into strips
for chicken fingers, butterflied to help it cook quicker
or pounded slightly so we can stuff it like we're
After they're flattened, we
place a chunk of Mexican-flavored
cheese in the center and wrap the chicken around it,
tucking in the sides like this.
As for the cheese, that can be pretty much whatever
you have on hand but typically, the softer, the better.
Now we brush each rollup with some melted butter before
breading them in our secret coating.
Can you keep a secret?
It's simply some cheese crackers that we crushed and
mixed with a bit of taco seasoning.
We bread each with it and place them, seam side down,
in a muffin tin.
That helps them keep their shape while baking.
Once they're done and the cheese is bubbling around
the edges, it's time to serve them up.
Between the crunchy coating and the ooey gooey cheesy
center, get ready for lots of oohs and aahs.
