Special To Channel 3000Tucked away in a suburban strip mall, Arbat takes its name from a picturesque Moscow neighborhood. As with a matryoshka -- a set of Russian dolls, one contained within the other -- you may be surprised by what you find inside. Happy comrades smile down from brick red walls and lacy white cloths cloak candlelit tables.Colorful bottles of vodka and wine bedeck the dollhouse bar. Yana seats you and takes your order; her boyfriend, Nikitin, is the chef proprietor. He cooks Russian soul food--simple, substantial and subtlely flavorful. The blini are glorious, stuffed cabbage savory, dumplings ethereal and honey cake bourgeoisly decadent.Arbat Russian Restaurant 3000 Cahill Main, Fitchburg, 277-0661. arbat-restaurant.comMadisonMagazine.com.
